A super simple and delish meal to make, any night of the week, is Cedar Plank Salmon.
I was surprised when several of my friends had not heard of cooking salmon this way. It’s super easy and the flavor is wonderful!
First, start out by picking up a cedar plank. There are several brands, but today I picked up the Fire & Flavor brand and I bought mine from Publix. You can buy planks at a variety of different stores…they are quite easy to find.
You’ll also want to pick up a nice piece of salmon. I bought a 2-lb piece and it serves about 4 people. You might have leftovers, but that makes for a great salmon salad the next day.
About an hour or so before you are going to cook the salmon, you have to soak the plank. I have an old rimmed cookie sheet that I use for this purpose. Place the plank on the cookie sheet and add just enough water to cover the plank. Try to soak it for at least an hour.
Now you want to heat up the grill and get ready to cook the salmon. Once the grill is up to the temp (around 350 degrees), place the soaked plank on the grill and let it sit for about 3-5 minutes.
Now you’re ready to put the salmon on. I season mine first with a little salt and pepper. You’ll want to leave the skin on the salmon and place the salmon skin side down. Later, after the salmon is cooked, slide the spatula in between the skin and salmon. It should lift easily.
Cooking time depends on the size of the salmon filet. My husband uses his IGrill thermometer which works great. We cook ours to an internal temp of 145 degrees. There’s no need to flip the salmon as it cooks just as it is. The cedar aroma is great!
Meanwhile, while that’s cooking, I’ve made some roasted asparagus and a baked sweet potato.
This is a quick and easy meal to prepare and healthy too. Once you start using the cedar planks you’ll want to use them all the time. There are several different ways you can prepared your salmon…seasoning, pestos, marinade. It’s a really simple, delicious and healthy dinner. Enjoy!
