The weather in SW Florida is BEAUTIFUL!! It’s Chamber of Commerce weather and we Floridians are thrilled! It’s OUR perfect time of the year to grill out and enjoy. I mixed up this little salad to go along with our Mediterranean burgers the other night and it was a hit… lots of fresh ingredients and very easy to make. Here’s how you do it!
Weekend Quinoa Salad
1 Bag Seeds of Change Quinoa and Brown Rice
2 cups of sweet white corn
3-4 Zucchini, chopped
4 cloves of garlic, chopped
1-14oz can of chickpeas, rinsed and drained
1 bunch of green onions
Pesto, basil or your favorite
1 cup of unsalted pine nuts
2 avocado, chopped
2 tomatoes, chopped
salt and pepper

Put a splash of olive oil into a skillet along with the corn, zucchini and garlic. Cook until lightly browned. Remove and set aside.
In a large bowl, combine cooked Quinoa and Brown Rice, chickpeas, green onion, pine nuts, pesto and a little lemon juice (to your taste). Once mixed together, add in cooked zucchini mixture and stir.
Once combined, add in chopped avocado and tomatoes. Season with a little salt and pepper. Voila! Easy, great tasting salad! It was the perfect side for my Mediterranean burgers.
